Sammi's cookbook, The Essential Vegetable Cookbook, contains 130 recipes that cover 30 different vegetables. In the cookbook, each vegetable has 4 recipes (main dishes, sides, appetizers, soups or salads), along with a vegetable profile that includes all the information you need to know about the vegetable. Finally, the book also has 10 easy recipes for dressings and sauces.
Most importantly, because Sammi believes that healthy eating should be easy, these recipes are all easy. Each recipe contains less than 8 ingredients and takes less than 1 hour to prepare (and many take less than 30 minutes!). The ingredients are all foods you can easily find in any grocery store.
